Notes: | Donated by retiring birch tapper at Lurgushall winery, West Sussex. Trees are tapped in early spring when the sap is rising. A small hole is bored in the trunk using the brace and bit to a depth just below the bark. Tubing is fixed into the hole and th, e sap drips out into a vessel on the ground. This takes 24-48 hours to collect about 1 litre of sap. There is about 3% of sap by volume in the finished beverage as sold by Lurgushall. |
