Notes: Notes from the Iroquois - white corn project website: About Iroquois White Corn x0Dx0AThe Iroquois White Corn Project, originally Pinewoods Community Farming, began as the vision of Dr. John Mohawk (Seneca) and Dr. Yvonne Dion-Buffalo (Samson Cree). Their des, ire to bring Iroquois White Corn back as a staple of the Haudenosaunee (Iroquois) diet began a decade-long project that has returned to its original home, Ganondagan.x0Dx0AIroquois White Corn is traditionally managed and protected to bring nutritious corn pro, ducts from heirloom seeds dating back at least 1,400 years in Haudenosaunee (Iroquois) communities. Hand-grown, hand-picked, and hand-processed, Iroquois White Corn products are nutritious, non-GMO, gluten-free, and have a low glycemic index.x0Dx0AOur goal is, to restore the farming, consumption, and distribution of traditional Iroquois White Corn to Native American communities and to offer Iroquois White Corn products to the community at large.x0Dx0AIroquois White Corn, along with beans and squash, is often calle, d 'Three Sisters.' Learn more by reading the 'Legend of the Three Sisters.'x0Dx0AMade with Good Minds once again at Ganondagan, our Iroquois White Corn is available for your own culinary creations. Healthy for you, healthy for Mother Earth.x0Dx0Aroquois Hulled Wh, ite Corn x0Dx0Ax0Dx0AOur whole kernel corn is washed or cooked in hardwood ash or lime water to remove the hull from each kernel. It is then dehydrated and packaged. When cooked, each kernel expands to approximately four times its original size, so one bag of thi, s corn is like buying four! Its texture holds up and does not become mushy when cooked. Perfect for traditional corn soup, it also mixes beautifully to any soup, chowder, chili, summer salads, stews, casseroles, salsas, or any other recipe where you would, use whole hominy or any beans. One bag of uncooked hulled corn yields 14-18 servings.
